3 recipes to blossom into spring

The weather is finally warming up, the birds are chirping, the flowers are blooming, and the days are getting longer. As we emerge from the long, brutal winter, we all need some tasty and fresh food to remind us that good times are coming. Which is why we have *yet again* put together three of our favorite dishes that you can make for yourself. With springtime flavors and easy to follow instructions, these treats are sure to have you hooked. Enjoy!

Strawberry Crêpes 

Ingredients:

  • ½ cup flour
  • 1 cup milk of choice
  • 1 large egg
  • Pinch of salt
  • Dash of vanilla extract
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon sugar (optional)
  • A few strawberries
  • Whipped cream 
  • Nutella (optional)
  • Powdered sugar

Try a delicious and easy sweet treat. Start by blending or mixing together the flour, milk, egg, salt, vanilla, butter, and sugar, if using. Set aside the batter for a few minutes. In the meantime, heat your pan on medium and grease with butter. A crêpe pan is best here, but a non-stick frying pan will work as well. Pour about a half cup of the batter into the pan, and tilt/swirl it around until the batter covers the surface. Wait a minute, and then begin to loosen the edges of the crêpe with a spatula and flip once it can be easily picked up. Cook until dark spots emerge on the bottom, then remove from the pan and let cool. Spread your whipped cream over half the crêpe (I prefer homemade because of the texture), top with thinly sliced strawberries, and fold into quarters. Finally, finish it off with a drizzle (or glob) of nutella, powdered sugar, and some extra strawberries. Enjoy! 

 

Crispy Gnocchi Salad

Ingredients:

  • ¾ pounds tomatoes of any kind
  • ½ a red onion
  • 1 bunch of parsley
  • 2 tbsp balsamic vinegar
  • Salt and pepper
  • 5 tablespoons of olive oil
  • 1 packet of gnocchi

Try this easy-to-make pasta dish that brings out an array of bold spring flavors in one dish. Cut the tomatoes into bite sized pieces. Slice the onion. Roughly chop the parsley. Combine the tomatoes, onion, and parsley in a large bowl, toss with balsamic vinegar, and a drizzle of olive oil. Add salt and pepper to taste. In a large nonstick or cast iron skillet add gnocchi over medium-high heat with olive oil. Cook for eight minutes until crispy, slightly moving the gnocchi around every few minutes. Once fully cooked, add into the bowl and mix. Serve and enjoy! 

 

Garlic Compound Butter

Ingredients:

  • 1 bulb garlic
  • 1 stick softened butter
  • 1 tbsp rosemary
  • 1 tbsp thyme
  • ½ tbsp lemon zest
  • Olive oil
  • Salt
  • Pepper

Try making this versatile garlic compound butter which can easily bring rich flavors to any dish or snack. Chop the top off of one whole bulb of garlic. Cover garlic in oil and salt then place in tin foil. Bake garlic at 350 F˚ for 20 minutes. Combine all ingredients with the butter. Let the garlic cool before squeezing it into the butter. Thoroughly mix and enjoy!
